It is a traditional restaurant that offers simple and genuine dishes of the Roman cuisine and is run continuously for 120 years by the same family of which I, Alessandro, am the exponent of the fourth generation..
The walls of the restaurant date back to 1400 and originally housed a post station along the Regina Viarum, where travelers, once arrived at the gates of Rome, stopped to refuel and rest or change horses.
The first documented evidence of the existence of the premises dates back to 1436 and consists of a cadastral map of the time in which the use of the building was indicated as an inn with kitchen.
In a later period, in the second half of the nineteenth century, the house that houses it was elevated. and transformed into a tavern, known as «Osteria dell'Acquataccio», which Luigi Canina* recalls in some of his writings.

Priscilla is an old traditional Roman restaurant. At the beginning of 1900 my grandparents, Margherita and Nazzareno, moved from Reatino to Rome and took over this inn. They had 4 children, 2 boys and 2 girls.
My grandmother, as she grew older, left the kitchen to her daughter Renata, while Armenia took care of the service.
In the '50s and '60s, the Trattoria enjoyed a certain reputation thanks to the frequent attendance of "cinematographers" during the filming of several films on the Appia Antica.
The restaurant was so managed until 1993, when I took over it is me, Alessandro.
In the hall you can see a portion of the drum perimeter of the Tomb of Priscilla.

Ours is a simple kitchen, of once... we use little fat and try to keep alive the recipes of our grandparents and "old" Rome.
We do not use frozen or frozen food, but only fresh ingredients of the day and especially local.
The expenditure does not come from the large distribution, but in the individual exercises of the Castelli Romani.
Every morning Ale goes to the butcher, the fruit farmer, the greengrocer of trust... select and buy the bag for the day and take everything in the Trattoria.

During the day, when the Trattoria is closed, Rosa and Assunta cut and clean the vegetables, prepare the sauces, cut the meat and start the longer preparations, such as tripe...
Ale makes sure that everything is ready and starts to cook what, lunch or dinner, you can order in the trattoria!
In Rome, generations have been cooking like this... and we want to keep them... more at home than this!
