OUR CUISINE
Ours is a simple, old-fashioned cuisine... we use little fat and try to keep the recipes of our grandparents and "old" Rome alive.
We do not use frozen or frozen foods, but only fresh ingredients of the day and especially local.
The expense does not come from large-scale distribution, but from individual businesses in the Castelli Romani.
Every morning Ale goes to his trusted butcher, fruit tree, vegetable shop... he selects and buys his toiletry bag for the day and takes everything to Trattoria.

THE TAVERN


Priscilla is an ancient trattoria of traditional Roman cuisine. At the beginning of the 20th century my grandparents, Margherita and Nazzareno, moved from the Rieti area to Rome and took over this inn. They had 4 children, 2 boys and 2 girls.
My grandmother, as she grew older, left the kitchen management to her daughter Renata, while Armenia took care of the table service.
In the 1950s and 1960s, Trattoria enjoyed a certain notoriety thanks to the assiduous association of "cinematograph" crews during the filming of several films about the Appian Way.
The trattoria was thus managed until 1993, the year in which I took over, Alessandro.
In the room you can observe a portion of the perimeter drum of the Tomb of Priscilla.
